1. Leftover Chicken Tacos

2 cups leftover cooked chicken, shredded
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper to taste
Corn tortillas
1 avocado, diced
1/2 cup fresh cilantro, chopped
1 lime, cut into wedges
Optional toppings: salsa, sour cream, shredded cheese

2 cups leftover cooked rice
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup mixed vegetables (such as carrots, peas, and bell peppers), fresh or frozen
2 tablespoons soy sauce (or tamari for gluten-free)
1 teaspoon sesame oil
2 eggs, beaten
Green onions, sliced for garnish
Veggie Fried Rice Instructions
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the onion and garlic and sauté until the onion is translucent.
Add the mixed vegetables and cook until they're just tender.
Stir in the leftover rice and soy sauce, and mix well to combine.
Push the rice mixture to the side of the skillet, and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix into the rice.
Drizzle with sesame oil and mix everything thoroughly.
Garnish with green onions before serving.
3. Savory Mashed Potato Pancakes

2 cups leftover mashed potatoes
1 egg, beaten
1/4 cup flour (all-purpose or whole wheat)
2 tablespoons chives or green onions, chopped
1/4 cup shredded cheese (optional)
Salt and pepper to taste
Olive oil for frying

In a large bowl, combine the mashed potatoes, beaten egg, flour, chives, cheese (if using), salt, and pepper.
Heat a few tablespoons of olive oil in a skillet over medium heat.
Form the potato mixture into small patties.
Fry the patties in the hot oil for about 4-5 minutes on each side or until golden brown and crispy.
Drain on paper towels and serve hot, perhaps with a side of sour cream or applesauce.
