Stir Fry is a fast, easy, and healthy solution to common food ingredients found in the fridge. Almost anything can be thrown in a pan with a protein, vegetables, and sauce, but sometimes it's handy to have a basic formula.
Here's my chicken stir-fry recipe. It's our go-to weeknight meal when we don't have the energy to spend much time in the kitchen or go to the grocery store.
The following serves a family of four.
Chicken Stir Fry Ingredients
1/2 c. reduced-sodium soy sauce
2 Tbsp. honey
2 tsp. toasted sesame oil
1 Tbsp. canola oil
1 head of broccoli, cut into small pieces
1 bell pepper, seeds, and ribs removed, chopped
2 cloves garlic, finely chopped or minced
1 lb. boneless, organic skinless chicken breast, cut into 1" pieces
Freshly ground black pepper
1/3 c. cashews (we do not include this because one of our kids has a but allergy)
Chicken Stir Fry Instructions
Whisk together the soy sauce, honey, and sesame oil in a small bowl.
In a large skillet over high heat, heat oil. Cook the bell pepper, broccoli, and garlic, stirring frequently, until softened, about 5 minutes. Add the chicken and cook, tossing occasionally, until golden brown and cooked through, about 8 minutes.
Stir in the cashews; season with pepper.
Pour sauce into the skillet and bring to a simmer. Cook, stirring occasionally, until thickened, about 5 minutes.
