Sausage and Noodle Bake

My wife has led the charge on a tradition of making homemade noodles. I'm not supposed to give away the recipe, but it is very similar to this recipe.


Below is what the noodles look like as you're drying them out:


Sausage and Noodle Bake

There are inevitably more noodles than we can eat, and they are not good warmed up. But what is downright delicious is this recipe for using them.


Ingredients


  • Four parts leftover homemade noodles

  • 1 part pre-cooked smoked sausage

  • 1 part green pepper

  • 1 part red pepper

  • 1 part onion

  • Minced fresh garlic cloves to taste

  • Red pepper flakes to taste

  • Cajun seasoning to taste

  • Enough Parmesan cheese to coat the top

  • Optional: Cilantro to add as a topping


Instructions


  • Mix the ingredients in a pan and sprinkle enough Parmesan cheese to coat the top.

  • Bake at 350 for 30-60 minutes.

  • Optional: Add cilantro to add as a topping after baking
